France - Corsica

Other specialities are the soft-flavoured olive oil with its distinct taste of flowers and herbs from the Balagne; fine white and rosé wines; uniquely Corsican patisserie as well as biscuits such as canistrelli created with almonds, various nuts, and wine; fig and nut, clementine and orange jams as well as the gorgeous chestnut purée; finally a whole range of unique breads such as the loaves made using chestnut flower.

The cuisine – a unique mélange of French, Italian, and the local creations – has to be one of the greatest: pink lamb chops from free-range animals; wild boar and hare that are cooked in wine sauce and accompanied by olives and lentils; partridge and wild pigeon cooked à la broche over a vine-root fire; mountain trout from the pure streams and rivers.

The many crustaceans make ingredients for the local type of bouillabaisse, azimu, served with aïoli, raw garlic and croutons; fish like the daurade, sardines, loup, mérou and rouget, all freshly plucked from those ultra-pure waters, and the great king of them all, the Corsican lobster which adds a whole new dimension to the term “succulent?.

These dishes are usually accompanied by Corsican pasta which is a delight, and savoured with a rosé from Figari or Patrimono or, for the purist, good French white or red wines carefully chosen to perfectly match the favour of these extraordinary dishes: the gastronomic memories will linger on. Long after you have left the island.
For visitors to Corsica, there really is an incredible choice of activities: visits to local markets and shops to select Corsican produce for the kitchen; gentle exploring in the boutiques of the nearest town; short or seriously long walks inland to venues of historical interest; just lolling around the pool or sunbathing and swimming in the sea at your local beach; guided maritime excursions or hiring a speedboat to explore the coast, perhaps to fish, and to picnic at a secluded cove.

Then, for the more sportif and young, there is tennis and windsurfing as well as sailing and diving schools where they can have lessons or hire equipment.

Corsica has a “Garden of Eden? quality with very many areas of awesome natural beauty: yet this paradise is just three to four hours away from most of the major cities in Europe.

After many visits to the island, we have chosen three of the most attractive areas: Saint Florent for its simplicity and beauty; the Bonifacio and Porto Vecchio region for the sailing and golfing facilities; Calvi for its variety of activities, sophistication and awesome setting.
